The Locked Vault Cocktail
A dark, stirred Irish whiskey cocktail built with cold coffee, bitters, and just enough demerara sweetness to keep the whole thing from turning into evidence.
- 2 ounces Irish whiskey
- 3/4 ounce Chilled cold brew concentrate or strong chilled coffee
- 1/2 ounce Demerara syrup see below
- 2 dashes Angostura bitters
- 1 dash Orange or chocolate bitters
- pinch Kosher salt optional but recommended
- Large ice cube
- Orange peel or 3 coffee beans for garnish
Quick Demerara Syrup: Combine ½ cup demerara sugar with ½ cup hot water and stir until dissolved. Let it cool before using. Store in the refrigerator
Add the Irish whiskey, chilled cold brew, demerara syrup, bitters, and optional tiny pinch of salt to a mixing glass.
Fill the mixing glass with ice.
Stir for about 20–25 seconds, until the drink is properly chilled and slightly diluted.
Strain into a rocks glass over one large ice cube.
Garnish with an orange peel if you want a little lift, or coffee beans if you want to keep it darker and more direct.
Drink slowly. This one has plans and none of them involve brunch.
Why It Works
Irish whiskey is the right base for this drink because it gives you warmth and character without bullying the glass. Bourbon would make this richer and heavier. Rye would make it sharper. Irish whiskey keeps the drink smooth, but still lets the coffee and bitters do their unpleasant little dance in the background.
The cold brew gives The Locked Vault its late-night edge. It adds bitterness, roasted depth, and the faint suggestion that someone has been awake too long making decisions they cannot walk back. The demerara syrup is important because regular simple syrup would sweeten the drink without adding much personality. Demerara brings a darker, almost burnt-sugar quality that fits the whole “safe-cracking at 2 a.m.” mood.
The bitters tighten everything up. Angostura gives spice and structure, while orange bitters add a cleaner aromatic note. Chocolate bitters, if you have them, push the drink deeper into noir territory. The tiny pinch of salt is optional, but it quietly makes the coffee and whiskey taste fuller without making the cocktail salty.
