Poolside Alibi Cocktail

A light summer sake cocktail made with pineapple juice, coconut water, lime, jalapeño, and a splash of rice vinegar.

Equipment

  • Cocktail shaker or mason jar with secure lid
  • Jigger or small measuring cup
  • Measuring spoon
  • Cocktail strainer
  • Rocks glass or stemless wine glass

Ingredients
  

  • 3 ounces Chilled dry junmai sake
  • 1 1/2 ounces Pineapple juice
  • 1 1/2 ounces Chilled coconut water
  • 1/2 ounce Fresh lime juice
  • 1/4 teaspoon UNSEASONED rice vinegar
  • 1 slice Thinly sliced jalapeno
  • 1 ounce Chilled club soda
  • Ice
  • Pineapple leaf, pineapple wedge, lime wheel for garnish

Instructions
 

  • Fill a cocktail shaker or securely sealed mason jar halfway with ice.
  • Add the sake, pineapple juice, coconut water, fresh lime juice, rice vinegar, and one thin jalapeño slice.
  • Seal and shake for approximately 8–10 seconds. Do not muddle the jalapeño unless you want a substantially hotter cocktail.
  • Fill a rocks glass or stemless wine glass with fresh ice.
  • Strain the cocktail into the prepared glass.
  • Top with club soda and stir gently to combine.
  • Garnish with a pineapple leaf, small pineapple wedge, or lime wheel.

Notes

Why It Works

Sake has subtle floral, fruity, and savory qualities that make it an excellent foundation for a light summer cocktail. Pineapple amplifies its fruitier characteristics while supplying enough sweetness and body to give the drink some substance.
Coconut water creates the suggestion of a tropical cocktail without the richness of coconut cream or the sugar of cream of coconut. It lengthens the drink, softens the pineapple’s acidity, and helps keep the finished cocktail crisp rather than creamy.
Lime juice brings the brighter acidity the drink needs, while the small amount of rice vinegar adds another layer of sharpness. Because rice vinegar and sake both begin with rice, the vinegar feels connected to the base spirit rather than like an unrelated sour ingredient dropped into the glass.
The jalapeño provides aroma, freshness, and a restrained flash of heat. Finally, club soda lifts the entire combination with carbonation and prevents the pineapple and coconut from becoming too soft or sweet.
It tastes tropical, but not sugary. Spicy, but not punishing. Complicated, but suspiciously easy to make.
